We’ve been making these no bake energy balls VERY often in our home lately. My daughter refers to them as cookie balls, and they’re her favorite thing to make. We snack on them during the day, and have them as a healthy sweet desert.
I’m always interested in sneaking the most nutrition into any meal while also keeping it delicious, which is why you’ll find things like flax and chia seeds in this recipe. There’s also an extra boost of protein with the vanilla collagen peptides (you can leave this out if you’d like and just use pure vanilla extract), in addition to the nut better.
No Bake Energy Balls… AKA No Bake Cookie Balls
Ingredients
1 cup oats
2 tablespoons ground flax
2 tablespoons chia seeds
1/2 teaspoon cinnamon
2 scoops vanilla collagen peptides (optional… you can can replace with 1/2 teaspoon pure vanilla extract)
1/4 cup shredded coconut flakes
1/3 cup peanut better (or nut butter of your choice)
2 tablespoons pure maple syrup
3 tablespoons unrefined coconut oil
1/4 cup dark chocolate chips
Directions
Add all ingredients to food processor.
Process until oats are pulverized, and dough consistency forms.
Roll dough into 1-2″ size balls.
You can enjoy these immediately, or place in the fridge for a later time.
