Buffalo Cauliflower Bites

I’ve been hearing about buffalo cauliflower bites for a while now, and decided to finally make a batch for my family this past Super Bowl Sunday. Wowza, they are good!

I’m a sucker for buffalo chicken anything… wraps, salads, or pizza all dripping with buffalo wing sauce. It was my biggest craving throughout both of my pregnancies. Well, now I’ve got another buffalo flavored recipe to throw in the mix, and the main ingredient is one of the healthiest foods on the planet. This is one delicious way to get more cauliflower into your life.

This recipe centers around cauliflower, which of course is a superfood in and of itself, but it also incorporates my favorite spice combo of turmeric and black pepper for the added anti-inflammatory properties.

Buffalo Cauliflower Bites

Ingredients:

  • 1 medium sized head of cauliflower chopped into florets
  • ½ cup flour
  • ½ cup water
  • 1 teaspoon garlic powder
  • 1 teapsoon turmeric
  • ½ teaspoon black pepper
  • 2 tablespoons melted butter
  • ¼ cup hot sauce (I use Frank’s Original Red Hot Sauce)
  • Coconut oil for greasing the pan

Directions:

  1. Preheat oven to 425 degrees F
  2. In a large mixing bowl, whisk together ½ cup flour with ½ water, garlic powder, turmeric, and black pepper.
  3. Add the bite-sized florets of cauliflower to the mixture, making sure all get coated evenly.
  4. Spread florets out onto a greased baking sheet and bake for 20 minutes, or until they start to turn golden.
  5. While florets are in the oven, in a separate mixing bowl, whisk together the melted butter and hot sauce.
  6. Remove the cauliflower from the oven and toss in hot sauce/butter mixture until all florets are coated evenly.
  7. Return coated florets back to the baking sheet and bake in the oven for another 5-8 minutes, or until crisp.
  8. Remove from oven, transfer to a plate, drizzle with your favorite ranch dressing, serve and enjoy!
