This dish is so good it might just steal the show from the main course! It’s perfect as a warm side dish for dinner, but here’s a secret: it’s even better the next day, served cold or reheated for lunch.

Why You’ll Love This Recipe

  • Flavor Explosion: The savory bacon, sweet dried cranberries, and tangy balsamic glaze make the perfect combination.
  • Crispy Perfection: Roasting Brussels sprouts brings out their natural sweetness while giving them a satisfying crunch.
  • Nutrient Powerhouse: Brussels sprouts are part of the cruciferous vegetable family, meaning they contain a powerful compound called sulforaphane, which is known for its anti-cancer and detoxifying properties.
  • Healthy Swaps: Using nitrate-free bacon ensures a cleaner, healthier ingredient, and roasting with olive oil keeps things heart-healthy and delicious

Here’s how I make them…

Crispy Oven Roasted Brussels Sprouts with Bacon, Dried Cranberries and a Balsamic Glaze

Ingredients

  • 2 lbs Brussels sprouts
  • 6-8 slices nitrate-free bacon (or substitute prosciutto or ham)
  • 4-5 tbsp extra virgin olive oil (enough to generously coat the Brussels sprouts)
  • 1/2 cup dried cranberries
  • Garlic powder, to taste
  • Sea salt and freshly ground black pepper, to taste
  • Balsamic glaze, for drizzling

Instructions

Step 1: Cook the Bacon

1. Preheat your oven to 400°F.

2. Line a baking sheet with parchment paper and lay out the bacon slices in a single layer.

3. Bake for 12-15 minutes, or until the bacon is 85% cooked (crispy but not fully done). This allows it to finish crisping up later when combined with the Brussels sprouts.

4. Remove from the oven, let it cool slightly, and pat off excess grease with paper towels. Tear or cut the bacon into bite-sized pieces and set aside.

Step 2: Prep the Brussels Sprouts (While the Bacon Cooks!)

1. Wash and thoroughly dry the Brussels sprouts with a towel or paper towels—getting them as dry as possible ensures they crisp up instead of steaming.

2. Trim off the ends and quarter the Brussels sprouts for even roasting.

3. Place them on a baking sheet and generously coat with extra virgin olive oil (don’t skimp!).

4. Season well with garlic powder, salt, and black pepper, then toss to coat evenly.

Step 3: Roast the Brussels Sprouts

1. After cooking the bacon, lower the oven temperature to 370°F. Place the Brussels sprouts in the 370°F oven and roast for 25-30 minutes, flipping halfway through, until golden brown and crispy on the edges.

Step 4: Combine Everything & Finish Cooking

1. Remove the Brussels sprouts from the oven and toss in the bacon pieces and dried cranberries.

2. Return the baking sheet to the oven for another 5-6 minutes to allow everything to meld together.

Step 5: Drizzle with Balsamic Glaze & Serve

1. Once out of the oven, drizzle balsamic glaze over the Brussels sprouts and bacon mixture.

2. Serve immediately, or enjoy cold the next day (it’s even better)!

Tips for the Best Roasted Brussels Sprouts:

⭐ Olive Oil Matters – Since olive oil’s smoke point is 375-410°F, roasting at 370°F is perfect for achieving crispy Brussels sprouts.

⭐ Get Them Dry! – The key to crispy Brussels sprouts is making sure they’re completely dry before roasting. Otherwise, they’ll steam instead of crisp.

Why Brussels Sprouts Deserve a Spot on Your Plate

Brussels sprouts aren’t just delicious—they’re a nutrient powerhouse!

✔ Supports Detoxification – Sulforaphane helps the liver remove harmful toxins.

✔ Anti-Cancer Properties – Studies show sulforaphane can slow cancer cell growth.

✔ Rich in Fiber – Supports digestion and gut health.

✔ Loaded with Vitamin C – Boosts immunity and promotes collagen production.

Make It Your Own! Here are a few ideas for changing up this recipe if desired:

  • Swap bacon for prosciutto or ham for a different flavor.
  • Use pomegranate seeds or golden raisins instead of dried cranberries.
  • Add a sprinkle of toasted pecans or walnuts for extra crunch.
  • Finish with Parmesan cheese or a squeeze of fresh lemon juice for a tasty twist.

This dish is one of my absolute favorites, and I hope you love it too! Let me know in the comments if you try it!
