- 1/4 cup pumpkin puree
- 1/3 cup pure maple syrup
- 2 large eggs
- 1 teaspoon pure vanilla extract
- 1/4 cup melted butter or unrefined coconut oil
Dry Ingredients:
- 2 cups oat flour (see below for instructions on making your own)
- 1/2 teaspoon baking soda
- 1/4 teaspoon sea salt
- 1/2 teaspoon cinnamon
- 1/2 cup chocolate chips
Instructions:
- Preheat and Prepare: Preheat your oven to 350 degrees Fahrenheit. Line a cupcake pan (I use and love this stainless steel one) with cupcake papers.
- Make Oat Flour: To create your own oat flour, simply place old-fashioned rolled oats in a blender or food processor. Blend until the oats become a fine, powdery consistency, resembling flour. 2¼ cups of oats should yield approximately 2 cups of oat flour.
- Mix Wet Ingredients: In a large mixing bowl, mash the ripe bananas. Add pumpkin puree, maple syrup, sea salt, cinnamon, eggs, vanilla extract, and melted butter or coconut oil. Stir the wet ingredients until they are well combined.
- Incorporate Dry Ingredients: Slowly add the dry ingredients to the wet mixture. Mix until the batter is smooth and all dry ingredients are fully incorporated.
- Add Chocolate Chips: Gently fold in the chocolate chips into the batter, ensuring they are evenly distributed.
- Bake: Using a spoon or an ice cream scoop, fill each cupcake paper with batter until they’re about 3/4 full. Bake in the preheated oven for 18-20 minutes or until a toothpick inserted into the center comes out clean.
