One of my favorite Sunday morning go-to breakfasts. Greek yogurt pancakes. A recipe I love to make, and love to feed my kids.
These pancakes are loaded with protein, thanks to the Greek yogurt and eggs. They’re rich and delicious, and remind me more of a donut than a pancake, but way healthier!
Healthy Protein Packed Greek Yogurt Pancakes
Prep Time: 5 minutes
Cook Time: 10 minutes
Serves: Makes approximately 4 medium sized pancakes
Ingredients:
For the pancakes:
- 2 large eggs
- 1 cup plain whole-milk Greek yogurt
- ⅓ cup all-purpose flour
- 2 teaspoons maple syrup
- ¼ teaspoon salt
- ¼ teaspoon baking soda
- Unsalted butter for the pan
For the topping:
- 3-4 large fresh strawberries
- ½ teaspoon sugar
Directions:
- Start by making the topping first (so it has time to marinate): Slice up your strawberries. Mix them in a bowl with ½ teaspoon of sugar. This will pull out the juices and give them that extra bit of sweetness!
- Whisk the eggs in a large mixing bowl until very smooth. Add in the yogurt and 2 teaspoons maple syrup and whisk until smooth. Continue with whisking in the flour, salt and baking soda until smooth.
- Heat a griddle or large skillet over medium/low heat and butter the surface. Pour or spoon the batter onto the griddle/skillet to make small/medium sized rounds. Cook until bubbles come to the surface and pop (2-3 minutes), then carefully flip. Cook on flipped side for 1-2 minutes, until pancakes are fully cooked. Repeat with the rest of the batter. Serve with the strawberry topping (optional).
