Originally made for my own kids’ lunchboxes, these muffins are parent-approved and kid-approved! Packed with fiber from oats, and free from refined sugar (with the crumble topping being optional), they are a nutritious and filling choice for growing kids. The natural sweetness from the apples, combined with the sweetness of pure maple syrup makes them a hit, while the balanced ingredients provide long-lasting energy—perfect for school days or afternoon snacks.
Ingredients:
Muffins:
- 2 cups oat flour (make your own by simply blending oats in a high speed blender)
- 1 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 1/2 teaspoon salt
- 1½ teaspoons baking powder (aluminum-free)
- 1/4 cup butter (half a stick), melted
- 2 large eggs
- 1/4 cup plain Greek yogurt (regular yogurt works too)
- 1/4 cup pure maple syrup
- 1/2 cup milk of choice
- 1 teaspoon pure vanilla extract
- 1 cup shredded apple, peeled (approximately 2 med/large sweet apples like Honeycrisp, Fuji, Gala or Golden Delicious)
Crumble Topping (optional):
- 1/4 cup cold butter (1/2 stick), cubed
- 1/4 cup brown sugar
- 1/2 cup oats
Instructions:
- Preheat your oven: Set your oven to 375°F and line a muffin tin with paper liners or grease it lightly.
- Make the muffin batter:
- In a large bowl, whisk together the oat flour, cinnamon, nutmeg, salt, and baking powder.
- In a separate bowl, combine the melted butter, eggs, yogurt, maple syrup, milk, and vanilla extract.
- Slowly fold the wet ingredients into the dry ingredients until just combined.
- Gently stir in the shredded apple. Avoid overmixing to keep the muffins light and fluffy.
- Prepare the crumble topping (optional):
- In a small bowl, combine the oats, brown sugar, and cold butter.
- Use your fingers or a fork to blend the ingredients until they form a crumbly mixture.
- Fill and top:
- Spoon the muffin batter evenly into the prepared muffin tin, filling each about 2/3 full.
- If using, sprinkle the crumble topping over each muffin.
- Bake:
- Bake for approximately 24 minutes, or until a toothpick inserted into the center comes out clean.
- Let the muffins cool in the pan for a few minutes before removing to cool completely.
