Lately, at the grocery store, I’ve been picking up a back of organic chocolate chip granola. This granola I’ve been buying is so delicious (I usually devour half the bag on the drive home), but it’s also pretty darn expensive! So, I decided to start making my own version. I’m really happy with how it came out. We’ve been munching on it as a snack, and having it as cereal with milk. It would also be so good on top of yogurt.
Is easy and quick to make, so you can pretty simply whip up a batch from the things you may already have in the pantry.
Here’s how I make it…
Homemade Chocolate Chip Granola Recipe
Ingredients:
- 3 cups rolled oats
- 1/4 cup uncooked quinoa
- 1/2 cup shredded coconut
- 2 tablespoons chia seeds
- 1/4 teaspoon sea salt
- 1/4 cup melted coconut oil
- 1/4 cup pure maple syrup
- 1 teaspoon pure vanilla extract
- 1/2 cup chocolate chips/chocolate chunks
Directions:
- Preheat oven to 300 degrees Fahrenheit.
- In a large bowl, combine and stir the oats, quinoa, shredded coconut, chia seeds, and sea salt.
- In a separate bowl, melt the coconut oil (if you’re not already using liquid form), and combine with the maple syrup and vanilla extract.
- Combine the wet ingredients with the dry ingredients, and mix well. *DON’T add the chocolate chips yet!*
- Pour the mixture out onto a parchment paper covered baking sheet, spreading it evenly.
- Let bake for 15 minutes.
- Remove the batch from the oven, and sprinkle on the chocolate chips.
- Blend the chocolate chips into the oats mixture with a spoon or fork (they should begin melting pretty immediately), then place back into the oven for an additional 5-7 minutes.
- Remove from the oven and let cool completely before placing in an airtight container.
