I’ve never been very fond of anything watermelon flavored, but these watermelon, mint, lime popsicles are SO good!
We had a very large watermelon to use up last week, too much to cut up and keep in the fridge, so I decided to use some in a popsicle concoction with the kids. Big success! I’ll be making these with watermelon from here on out. With a little lime juice and some fresh mint leaves, the watermelon taste is far from overbearing, and it’s so summery fresh! 🍉
These homemade popsicles are made with only those three basic ingredients – watermelon, mint, and lime. That’s it. No need for a liquid base, because the watermelon blends right down to juice.
Not only do the popsicles taste great, but the recipe also makes a delicious smoothie/juice to easily enjoy straight from a glass.
These are so easy to make, fresh, delicious, and the color is so beautifully vibrant.
Watermelon, Mint, Lime Popsicles
Ingredients:
- 1/4 – 1/2 of a large watermelon (about 4-5 cups, cut into chunks small enough to fit in the blender)
- Juice of 1 lime
- 4-5 leaves of fresh mint
Directions:
Place all ingredients in a high speed blender (I use and love my Vitamix). Blend until smooth, then pour into your favorite popsicle molds [we’ve been using these ones]. and place in the freezer. Give them at very least 4 hours to fully freeze. Enjoy!
