- 1/2 tsp sea salt
- 3 cups rolled oats (love Bob’s Red Mill Organic Rolled Oats)
- 1 cup light brown sugar, packed
- 1/4 cup white sugar
- 1 cup unrefined coconut oil (warmed to a soft or liquified state) or 1 cup butter (Nutiva Cold Pressed & Unrefined Coconut Oil is a favorite)
- 2 large eggs
- 1 Tbsp pure vanilla extract
- 2 cups chocolate chips (such as Ghirardelli 60% Cacao Bittersweet Chocolate Chips)
Instructions:
- Preheat the oven to 350°F (175°C).
- In a large mixing bowl, combine the all-purpose flour, baking soda, cinnamon, and sea salt.
- Add the rolled oats, light brown sugar, and white sugar to the bowl, mixing well with the dry ingredients.
- Incorporate the softened coconut oil (or butter), eggs, and vanilla extract into the mixture. Blend until all ingredients are evenly combined.
- Gently fold in the chocolate chips until they are distributed throughout the dough.
- Form the dough into balls, approximately 2 inches in diameter, and place them on a cookie sheet lined with parchment paper, spacing them about 2 inches apart.
- Bake the cookies in the preheated oven for approximately 10 minutes or until the edges are slightly browned.
