Quick and Easy Pickled Red Onion

Never waste an unused or leftover red onion again. Make pickled red onion! Pickled onions are so tasty and, so good for you. A sweet, tangy way to get in all those onion nutrients.

It was in Mexico on our honeymoon when I realized how much I love pickled onions. We ate a whole lotta’ tacos that week (obviously), all topped with cilantro and pickled red onion with a squeeze of fresh lime. Yum.

Reminiscing about those delicious meals recently sent me on a quest to figure out how to make pickled onion at home, and wow, I never realized how easy it is. And quick too! With only a few ingredients that you likely already have in the pantry, you can have delicious pickled red onion after only a couple of hours of soaking.

Pickled Red Onion Recipe

Ingredients:

1 medium red onion

1/2 cup hot water

1/4 cup distilled white vinegar

1/4 cup apple cider vinegar

1 tablespoon sugar

1/4 teaspoon sea salt

Directions:
  1. Remove the skin of the onion and thinly slice. I use a mandoline slicer for very thin consistent slices.
  2. Place the onion slices in a mason jar, pressing down to pack them all in.
  3. In a medium saucepan, combine the hot water, white vinegar, apple cider vinegar, sugar, and salt, and whisk together until the sugar and salt dissolve.
  4. Pour the mixture into the mason jar until all the onion slices are covered.
  5. Tightly cap the jar and let soak for at least an hour, then enjoy!

I kept this recipe simple with only a few ingredients, but feel free to add in some of your favorite spices and herbs. Things like garlic cloves, red pepper flakes, and whole peppercorns would all be tasty additions.

I hope you love these as much as I do. My husband hates [raw] onion, and yet, he’s been loading his tacos up with these as much as I have.
