Here’s a favorite healthy popsicle recipe that we’ve been making a lot since our spinach sprouted from the garden.
These vibrant, frozen delights are a perfect blend of tropical flavors and nutritious ingredients, making them a hit for kids and adults alike.
A fun way to incorporate more greens
We all know the struggle of trying to convince our kids to eat their greens. These popsicles offer a sneaky way to incorporate nutrient-rich spinach into their diets without the fuss. Spinach is packed with vitamins A, C, and K, as well as iron and fiber – nutrients our bodies want and need! (Check out my post on the health benefits of spinach.) The natural sweetness of pineapple and mango masks the taste of the green, making it a win-win situation!
Added benefits of tropical fruits
The tropical fruits in these popsicles are not only delicious, but also rich in essential vitamins, minerals, and antioxidants. Pineapple is known for its bromelain content, which aids digestion, while mangoes offer a boost of vitamin C to support the immune system. By incorporating these fruits into frozen treats, you’re providing yourself and/or your kids with a healthy snack/dessert that will keep them cool and nourished during hot summer days.

A favorite healthy popsicle recipe:
Pineapple, Mango, Spinach Popsicles
Ingredients:
- 1 cup pineapple chunks (I use frozen)
- 1 cup mango chunks (I use frozen)
- 1 cup fresh spinach leaves (lightly packed)
- 1½ cup coconut water
Instructions:
- Blend all ingredients in a blender until smooth and well combined.
- Pour the mixture into popsicle molds. (We use these ones.*)
- Insert popsicle sticks into the molds.
- Place the molds in the freezer for at least 4 hours or until completely frozen.
- Enjoy your homemade tropical popsicles!
