Tacos will always be a favorite in our home, and slow cooker meals are a definite hit for me – quick to prepare and easy to clean up. Combine the two and it’s a perfect dinner, in my opinion.
I’ve been making shredded chicken for tacos and burritos in the CrockPot occasionally for at least the last 15 years. It’s a favorite reoccurring meal, and one that comes top of mind for me when planning for a gathering or dinner party.
A big batch using 6-8 chicken breasts makes a LOT of shredded chicken for tacos. It comes out juicy and flavorful, and it’s really simple to make.
Here’s how I make slow cooker shredded chicken for tacos and burritos:
Ingredients:
- 3-6 boneless chicken breasts (or even more if you plan to serve a larger group)
- 1 14oz jar salsa of your choice
- Seasoning (You could use a packet of your favorite taco seasoning mix, or throw together your own like I usually do. I use garlic powder, onion powder, paprika, turmeric, black pepper, chili powder, and sea salt.)
Directions:
- Remove chicken from package, rinse, and place in bottom of the slow cooker.
- Add the seasoning over top of the chicken.
- Pour in the salsa.
- Turn the slow cooker on, and let cook on low for 6-8 hours, or on high for 3-5 hours.
- Once the chicken is done cooking, stir and shred apart with a fork. You could even place the chicken into a food processor (I don’t recommend putting any hot food into a plastic container), or a stand mixer to shred it apart more thoroughly.
I like to serve this with rice, beans, pickled red onion, avocado, lettuce, cheese, lime wedges and hot sauce with taco shells or burrito wraps. So delicious!
This slow cooker shredded chicken is also great for using in quesadillas, Mexican bowls, and even pulled chicken sandwiches – add a little buffalo sauce and it make a great buffalo chicken sandwich!
