Spinach is such a versatile vegetable. It’s easy to incorporate into meals, and can easily be sneaked into picky eater meals if needed.
These are some of my favorite spinach meal ideas.
9 Spinach Meal Ideas
1. Add it into smoothies
Don’t be afraid to add spinach to your favorite smoothie recipes. The taste is subtle, and you get loads of nutrition from it! Find my favorite superfood green smoothie recipe here.
2. Use it as a pizza topping
What tastier way to get in your veggies than on top of pizza?! LOAD the pizza with a couple handfuls (at least) of spinach before putting it in the oven to cook… it cooks down a lot!
3. Chop and add into pasta sauce
Chop it up fine and throw it into pasta sauce for whatever dish you choose. You’ll barley notice it’s there. I do this with garlic too.
4. Sauté with salt, olive oil and lemon for a chicken breast topping
Salted, lemony sautéed spinach goes so well with chicken!
5. Use it as a replacement for iceberg lettuce on burgers and sandwiches
Iceburg lettuce contains few nutrients (it’s mostly water), so replace it with spinach for a major upgrade.
6. Throw it into salads
Mix extra spinach in with whatever other greens you typically use for a salad.
7. Chop fine for a taco topping to replace iceberg lettuce
A huge nutritional upgrade from iceberg lettuce. It won’t make your tacos any less tasty, I promise!
8. Cook it in an omelet
Power breakfast.
9. Make spinach quiche
I’ve been making tiny little spinach quiche muffins, and they are so good. I whip chopped spinach, onion, cheese, eggs, a little milk and salt and pepper in a large bowl, pour into buttered muffin tins (only about 3/4 of the way full), and cooked in the oven for about 15-20 minutes (until firm) at 350 degrees F. So tasty.
